Olivieh is a delicious salad of cooked vegetables and chicken breast, which is used as a main food and served with bread. It is mostly maid for casual parties and eaten as a sandwich or on it’s own. Sometimes I mix the mayonnaise or replace it with yougurt to make it healthier, but with mayonnaise only it tastes more delicious .
- 500 g potatoes (peeled and boiled until cooked)
- 2 eggs (hard boiled)
- 500 g chicken breast (cooked and shreded)
- 1-2 carrots (boiled until cooked)
- 1/2 cup green peas (cooked or canned) – You can buy a frozen mix of peas and carrots and cook it as per package instruction.
- 1/2 cup chopped pickled cucumber
- around 1 cup mayonnaise
- 1 tbsp lemon juice
- salt and pepper to taste
- Take a big bowl or a pot.
- Cut potatoes into small cubes (don’t overcook the potatoes as they may become mashy when you mix the salad). Add to the bowl.
- Chop carrots into very small cubes. Add to the bowl.
- Add chicken, peas and chopped pickled cucumber.
- Combine all ingredients with mayonnaise, lemon juice, salt and pepper.
- Place Olivieah in the refrigerator at least for 2 hours before serving.
- Put the mixture in a serving dish. You can decorate salad with slices of tomato, olives, etc. Serve cold with fresh bread.
